I cannot wait to try this. I used to live in Arizona and Costa Vida's pulled pork salad with mango dressing was my favorite. Now that I am pregnant, I have been craving it so badly! Thank you!

Pepsi would make more sense since that is what they have on tap in the restaurant. As someone who works in the restaurant industry I know you try to keep food cost to a minimum, which means using everything you have on hand as much as possible. Why bring in coke when you already have Pepsi there. Also Pepsi has a sweeter taste than coke on an individual bases. Coke is more acidic. Just a thought. Let you know how mine turns out.

In reply to Davis, it closed :( It tried to keep going with new management and a new name (LOCO) but it too closed. My daughter, and my son and I were devastated. We started talking about Costa Vida the other day and I got the idea to try the web for the recipe. Can't wait to try this Sunday :)

Great recipe! We didn't have any coke on hand, so I substituted Pepsi. I'll have to try it with Coke next time, although the Pepsi version was also very good. Thanks!

I have one question of concern regarding all of this. You state in your post that the chef you have been emailing is in Maine? Costa Vida is definitely growing, but according to their official site, they certainly don't have any stores in Maine. Can you offer more credibility to his recipe opinion?

Thanks

I've got your recipe in the crock pot right now....very excited. I did cut back on the white sugar (maybe 1/4 c instead of 1/2). I also used a smaller 8oz can of tomato sauce instead of the typical larger size. My roast is about 4.15lb. Another tip is that at Costa Vida they dust your hot tortilla with powdered Parmesan cheese. I will let you know how it came out. I also noticed that this blog was written a while ago. Have you made any adjustments since then?
